Mushroom Wild Rice

Ingredients

1 cup wild rice (makes 3 cups cooked)

1 3/4 c vegetable broth

1/2 Tbsp salt

1 Tbsp fresh thyme, chopped

1 Tbsp olive oil or vegan butter (Miyokos brand)

1/2 cup shiitake mushrooms sliced

3 Tbsp golden raisins

Instructions

Preheat oven to 375 degrees.

In a large pot, bring rice, broth & salt to a boil.

Pour into a 9x13 baking dish, cover with foil and bake for 35 minutes or until all liquid is absorbed.

While rice is cooking, heat oil (or butter) in a skillet and sauté sliced shiitake mushrooms for 8 minutes on medium heat.

Add chopped thyme & golden raisins - sauce for another 5 minutes.

Mix mushrooms with rice and fluff before serving.
