Butternut Squash Caprese
Not sure where we found this recipe, as I found it in my stack of recipes, ripped it out of a magazine at some point. This recipe is not only beautiful, filled with bright colors, but it is simple to make and very flavorful! Not sure why we waited so long, but it will definitely be kept in our recipe rotations moving forward. We added ground beef to complete the meal, it would work nicely with other proteins or a flavorful side dish to share.
Ingredients
1 butternut squash
Olive oil, to taste
Salt and pepper, to taste
2 avocados
Cherry tomatoes, about ½ a basket, quartered
1 bunch of basil, torn
Smoked mozzarella, cubed
Instructions
Peel, seed and cube butternut squash. Place on a baking sheet lined with parchment paper. Drizzle with olive oil, salt and pepper tossing well. Arrange cubes in a single layer and roast at 425 degrees for 20 minutes or until squash is tender and golden brown.
Meanwhile, cut up avocados, tomatoes, basil and mozzarella. Toss with butternut squash adding more salt, pepper and/or olive oil if so desired and serve at room temperature.
