Vegetable Stir-Fry with Herb Quinoa
Ingredients:
Vegetables:
- 1 cup Broccoli, cut into florets
- 1 cup Carrots, sliced
- 1 cup Chard, chopped
- 1 cup Kale, chopped
- 1 cup Peas
- 1 cup Summer Squash, sliced
- 1 cup Zucchini, sliced
- 1 cup Turnips, diced
Herbs:
- 2 tbsp fresh Mint, chopped
- 1 tbsp fresh Rosemary, chopped
Quinoa:
- 1 cup Quinoa
- 2 cups Vegetable Broth or Water
- 1 tbsp Olive Oil
Stir-Fry Sauce:
- 2 tbsp Soy Sauce or Tamari
- 1 tbsp Olive Oil
- 1 tbsp Sesame Oil
- 1 tbsp Rice Vinegar
- 1 tbsp Maple Syrup or Honey
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
Instructions:
1. Prepare the Quinoa:
- Rinse the quinoa under cold water.
- In a medium saucepan, combine quinoa and vegetable broth (or water).
- Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Fluff with a fork, stir in 1 tbsp of olive oil, chopped mint, and rosemary. Set aside.
2. Prepare the Stir-Fry Sauce:
- In a small bowl, whisk together soy sauce, olive oil, sesame oil, rice vinegar, maple syrup (or honey), minced garlic, and grated ginger. Set aside.
3. Cook the Vegetables:
- Heat a large skillet or wok over medium-high heat with 1-2 tbsp of olive oil.
- Add the carrots, turnips, and broccoli. Stir-fry for about 5 minutes until they start to soften.
- Add the zucchini, summer squash, and peas. Stir-fry for another 3-4 minutes.
- Add the chard and kale. Continue to stir-fry until the greens are wilted and the vegetables are tender, about 2-3 minutes.
- Pour the stir-fry sauce over the vegetables. Toss to coat and cook for another 1-2 minutes until the sauce is heated through.
4. Serve:
- Serve the vegetable stir-fry over a bed of herbed quinoa.
- Garnish with fresh salad mix for added crunch and freshness.
Tips:
- You can add some meat for extra protein.
- Adjust the amount of sauce to taste, and feel free to add a dash of hot sauce for some heat.
