Chimichurri Cauliflower

Ingredients

Chimichurri

1 shallot, chopped

1 Fresno chile, destemmed

3 garlic cloves

2 tbsp nutritional yeast

¼ cup red wine vinegar

¾ cup olive oil

½ cup cilantro

¼ parsley

1 stem oregano

Cauliflower

1 head cauliflower florets

2 tbsp olive oil

Salt & pepper

Instructions

Preheat oven to 350F and prepare a baking sheet. In a bowl, toss cauliflower in salt and pepper. Pour onto baking sheet and bake for 20 minutes until the cauliflower is tender. Meanwhile, mix all chimichurri ingredients in a blender until combined. Toss cauliflower in half of the chimichurri mixture and bake for another 5-10 minutes until cauliflower begins to crisp on the edges. Remove and serve warm, topping with remaining chimichurri.
