Smoky White Bean & Kale Stew
Ingredients
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
1 jar diced tomatoes
2 cups vegetable broth
3 cups white beans, soaked (or canned)
½ tsp smoked paprika
5 drops liquid smoke
¼ tsp crushed red pepper (optional)
Salt & pepper
4 cups greens (red mustard, kale or collard greens)
Vegan parmesan, grated
Instructions
Heat oil in a large pot over medium-high heat. Add onion and sauté until soft and beginning to brown, about 5 minutes. Add garlic; stir 1 minute. Add tomatoes with juice, paprika, crushed red pepper, salt, pepper & liquid smoke. Stir to combine and cook for 2 minutes. Add vegetable broth and white beans; bring to boil, stirring often. Reduce heat to medium-low, cover, and simmer until the beans are soft (30 minutes). Add greens and cook for 10 minutes until wilted and tender, stirring occasionally. Serve hot with grated parmesan.
