Garlic Smashed Turnips
Ingredients
12 small turnips, peeled
¾ cup grated vegan parmesan
¼ cup vegan butter
3 garlic clove, minced
¼ tsp salt
Black pepper
Instructions
Boil peeled turnips for 20-30 minutes or until fork tender. Preheat the oven to 375F.
Place the boiled turnips on a kitchen towel and place another towel on top.
Gently smash each turnip until they are about ½ inch thick. Allow to drain and cool between the towels for 15 minutes.
Heat a small pot on medium and add garlic, salt and pepper.
Turn off the heat and let the mixture sit for 5 minutes. Line a baking sheet and brush each turnip with a little of the butter mixture.
Sprinkle with grated parmesan, press and quickly flip. Repeat on the other side.
Bake for 20 minutes, flip and bake another 15 - 20 minutes until golden brown.
Serve hot with fresh herbs or nasturtium pesto.
