Sping Pea Salad
Ingredients
Serves 4
½ cup peas
1 cup pea shoots
4 cups spring mix
½ cup fresh herbs
Pickled radishes
Sunflower seeds
Edible flower (nasturtium, borage, etc.)
Dijon-basil vinaigrette
Instructions
Combine ingredients in a large bowl and dress with dijon-basil vinaigrette.
Quick-Pickle Radishes
Ingredients
10-20 radishes, thinly sliced
1 cup apple cider vinegar
1 cup warm water
¼ tsp mustard seeds
1 tbsp sugar
1 ½ tsp salt
Ingredients
Slice radishes and add to a jar. Heat remaining ingredients in a small pot -- bring to a boil and then simmer until sugar is completely dissolved. Pour liquid over the radishes and allow to cool. Cover and place in the fridge overnight to pickle.
