Cantaloupe Salsa

Yields 2 cups

Ingredients

1 ½ cups cantaloupe, small dice
1 tomato, small dice
¼ red onion, fine dice
⅛ cup fresh cilantro, chopped
½ yellow bell pepper, small dice
1 jalapeno, seeded and chopped
2 tablespoons lime juice
1 garlic clove, minced
1 tablespoon olive oil
½ tsp salt
Pepper to taste

Instructions

Combine all prepared ingredients in a medium bowl and stir until combined. Taste and adjust seasonings. Serve with chips.
