Watermelon Poke
Yields 1.5 cups
Ingredients
2 cups watermelon, cubed
3 tablespoons tamari (or coconut aminos)
2 tablespoons sesame oil
½ teaspoon rice vinegar
¼ teaspoon agave nectar
Optional garnish
Sesame seeds
Scallions, finely chopped
Sliced radish
Instructions
Mix marinade ingredients together in a small bowl until combined and pour over the cubed watermelon. Gently stir until all of the cubes have been coated. Marinate for at least 2 hours before serving, stirring occasionally for an even marinade.Top with optional garnishes and enjoy.
