Crunchy Okra Tacos
Oven Fried Okra
4 cups fresh-cut okra
1 cup plant milk
1 cup cornmeal
½ cup gluten free all purpose flour
2 tablespoons lemon juice
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon onion powder
Cayenne (optional)
Wash, slice, rinse and dry okra. Preheat the oven to 450F and prepare a lined baking sheet. Add all batter ingredients to a mixing bowl and stir until combined. Dip okra pieces in batter and add to the baking sheet in a single layer. Bake for 10-15 minutes, flip and bake 15 more minutes until golden and crispy. Remove from the oven and cool slightly before enjoying.
Aioli
1 cup mayo
3 tablespoons hot sauce
3 tablespoons chives, chopped
½ teaspoon salt
Combine all ingredients until mixed. Adjust seasonings to taste before serving.
Kale & Carrot Slaw
2 cups shredded kale
1 cup shredded cabbage
½ cup shredded carrots
½ cup sunflower seeds
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tsp maple syrup
½ tsp salt
Fresh cracked pepper
Combine all ingredients in a mixing bowl and enjoy
