Dragon Fruit Chia Pudding

Ingredients

1 dragon fruit (red or pink)
2 tablespoons chia seeds
1 cup plain yogurt
¾ cup coconut milk
1 tbsp maple syrup
1 tsp vanilla
Small pinch of salt

Instructions

Cut the dragon fruit in half and use a knife to slice the flesh into cubes. Using a spoon, scoop out the cubes into a bowl and set aside. Add chia seeds, ½ cup yogurt, ¼ cup milk, maple syrup, salt and ¾ of the dragon fruit (leaving the rest for a garnish) to a high powered blender and blend until smooth. Transfer to a container and place in the fridge to begin setting. Add remaining ingredients, except fruit, to the blender and mix until creamy. Pour on top of chia seed mixture and return to the fridge for at least an hour to set. Top with remaining dragon fruit cubes and enjoy.
