Refrigerator Dill Pickles
Ingredients
In each jar:
1 cucumber, cut into spears or slices
2 garlic cloves, crushed
4 dill sprigs or 1/4 tsp dried dill
1/4 tsp mustard seeds
1/4 tsp coriander seeds
1/4 tsp black peppercorn
For the brine:
1 1/4 cup white vinegar
3 tbsp kosher salt or pickling salt
2 tbsp honey
2 cups cold water
Directions
1. For the brine place vinegar, salt and honey in small saucepan. Heat until salt and honey are dissolved. Remove from heat and add cold water. Set aside.
2. Place cucumbers in mason jars. Add all other ingredients to jar.
3. Evenly distribute brine in mason jars.
4. Add additional water if needed to completely cover cucumbers.
5. Seal with a tight lid and place in fridge for 24 hours.
Serving: 4 pint jars
