Gazpacho

Ingredients

  • 1 container of small tomatoes, or 5 medium tomatoes

  • 1 cucumber

  • 1 large or 2 small bell peppers (any color according to flavor preference)

  • Peppers- Shishito or Banana if you prefer non spicy; Jalapeño or Serrano if you prefer spicy

  • 1/4 red onion or 2 green onions

  • 1-2 garlic cloves, depending on flavor preference

  • 3 T olive oil

  • 2 T apple cider vinegar (or more if you prefer a zingier flavor)

Instructions

  • Coarsely chop all larger ingredients, and finely chop green onions and garlic, if using.

  • Place each individual item (except finely chopped items, olive oil, and vinegar) in a food processor or blender at a time and run on low to finely chop each item.

  • Add chopped ingredients (including hand chopped items) to a mixing bowl

  • Once everything is chopped, return half of mixture to blender and add olive oil and vinegar. Blend on high speed until the mixture is puréed. (if you prefer a smoother texture, blend whole mixture, rather than half)

  • Combine puréed mixture with chopped mixture and add salt and pepper to taste.

  • Serve chilled, topped with desired garnish (finely chopped cilantro or parsley, sliced avocado, or a dollop of sour cream all make great toppings!)
